Sun-dried Tomato and Pepper Pasta

Ingredients
- Box of small pasta of choice
- Red pepper flakes
- Bell pepper (red, orange, and/or yellow)
- 3 Garlic cloves
- Shallot or onion
- 3 tbsp Tomato paste
- ½ cup Sun dried tomatoes
- Italian seasoning
- Red pepper flakes

Boil pasta
Start boiling your pasta in heavily salted water

Sautee sauce ingredients
In a large pan, sautee all sauce ingredients except the tomato paste and wine. When thoroughly cooked, add tomato paste and continue stirring until it darkens. Pour in the wine.

Add the wine and pasta water to the sauce
Pour a generous mugful of pasta water into the pan with the sauce ingredients. Also add several glugs of whatever white wine you have on hand, and a pat of butter. Mix until well incorporated and butter is melted

Drain the pasta and blend the sauce
Drain the pasta into a colander, reserving more pasta water. Dump the sauce ingredients into the pot the pasta was cooked in. Immersion blend the sauce, adding more pasta water as needed (this will take some time and patience!). Add grated parm to the sauce, and blend again until smooth.

Assemble
Add the pasta to the large pan you used to sautee the sauce ingredients. Pour in the sauce. Mix well -- add more parm or butter to taste.
